Best Pozole Recipes

Pozole is one of the true “masterpieces” of Mexican cuisine with many different recipes depending on regional traditions, but it all starts with cacahuazintle – a particular type of grain corn which is soaked and cooked into a stew to which meat – pork or chicken – and various other ingredients are added.

Those of us at CDR here in San Miguel have our preferences – there is the white pozole of Guerrero and the red of our home state of Guanajuato. Here are links to a few favorite recipes.
